I asked Sicard about winterizing the fridge and got about three different stories...that's why I contacted Jayco. I also have a lowpoint for the line but that doesn't guarantee the line will allow the water to flow back from the fridge. I think you should look for the valve, behind the drawer under your oven, and open disconnect it. I cleared all of my lines using an air compressor set at 30 psi and then filled the system excluding the refrigerator water line (previously disconnected) and the water heater (drained and by-passed) with polypropolene RV antifreeze...make sure you don't use the cheaper Ethanol

Panel with all of the water system control valves

I'm sorry I don't have the name of the manufacturer of the control panel (my RV is in the shop right now). But if you check your manual I think it tells you who makes the control panel. On the manufacturers web site they give lots of info on making sure the control panel is winterized properly.

And you are right, the owners manual isn't much.
