My hot water tank is close to my stove top. I light my stove top to get the gas moving in the line then ignite my water heater.

Go with the disconnect switch and a 30 amp breaker to replace the master 30 amp fuse by the battery
.Just makes life easier.

One of my battery posts has a spin on connector. I just spin it off and remove the negative cable. No additional purchase required.

Ditto. Mine is on A-frame next to batteries. Easy peasey on/off.

As for the water heater, not sure which one you have. I suspect you have to manually light it. I would recommend first lighting the stove, until you get a good flame. Then light the frig and water heater. This purges most of the gas line first.
When it comes to anything dealing with propane I do exactly what's mentioned here. You have to purge all the air out of the lines, so I just turn on the stove until I get it to light. Then I'm able to turn on the fridge, water heater and furnace without any faults.

On my Jayco TT, the white goes from the battery '-' (negative) to the trailer frame.

Have you tried the power jack while hooked up to tow vehicle 7-pin?
My power jack is not working on a new battery (but does work when hooked up to 7-pin TV) so I think I just need to replace the fuse that goes from battery to trailer but have not had time to check that yet

Not hooked up. Is the fuse located inside the electric jack casing? All fuses inside panel in trailer are good so not sure where this ones located

My daughters Jayco trailer has an in-line fuse about 18” from the connection on the jack.

I don't know which unit you have, but it's likely the reverse polarity fuses in your converter/charger are blown because the battery was connected incorrectly.
