Welcome Aboard!
Is it possible? Absolutely! There are many variables though. We often camp in those temperatures, and do not have an enclosed underbelly. My preference is to have an electric site.
If you will not have electric (shore power) your battery could be dead in 1 maybe 2 days, as the furnace uses a lot of power. So you need a method to recharge your battery(s). We recently purchased a generator. Plugged in for 2 hours in the morning. That topped of the battery. We again ran the generator for another hour or two in the evening, topped off the battery and used our electric heat option, and charged other devices.
We tend to keep the cabinet doors ajar that have plumbing that runs through them, to allow a little more heat to those areas.
If the daytime highs will reach the 40's absolutely no issues with exposed tanks. If the highs might reach freezing than the tanks will become an issue after a few days.
If you keep water in the FW tank, fill the tank full. The large thermal mass will keep if from freezing so quickly. Do note, that much water when frozen can do damage.
If you have a MH, most likely your plumbing pipes are exposed under the floor and could freeze.
I hope all goes well
You can winterize the plumbing. Use jugs of water for your needs. Add a little RV antifreeze down the drains to keep the tanks from freezing.
