Unfortunately, that LED is the sensor for the dimmer, if you put tape over it, I don't think you will be able to get the switch to function, and certainly not the dimmer. We don't have one near the bed or in the bedroom, but our others do cast a bright beam of light.
I added a dimmer to our bedroom lights, and for this very reason, I opted for the American Technologies 12V dimmer switch for LED lights. It may need a little more space for a cutout, but it does not have that bright sensor. It has a slide that you can leave in any position and the rocker switch turns the light on and off.
