Electric Water Heater inconsistent

I have a 2005 Jayco Eagle and have only had it a short time, after initial set up and turning the switch on to the electric water heater we get hot water (usually) but does not reheat right away, in fact it may go hours and hours and then it may or may not be hot.
I am knew to RV world and not sure where to start, but have checked breakers, although this can not be it because it will correct itself some times.

ideas ?

Maybe a defective thermostat or high temperature cut-off? Here's a link to an Atwood manual from Bryant RV that may help: Atwood Water Heater Manual. Probably page 14 applies to your situation - if your water heater is an Atwood.
