I recently noticed one of the screws which mounts the rear rain gutter has stripped. I am unsure the best way to remedy this problem. Shall I use a drywall anchor?
Insert a toothpick into the hole and break it off. Now, put a dab of Dicor sealant in the hole. Replace screw.

Glad it worked. Used the toothpick trick a lot and it never fails

If it's a pretty good size hole, use a golf tee! A lot less frustrating than playing golf

Depending on the situation, sometimes I use strips cut from a Wire-Tie to take up the slop on a screw hole. I've got the table in my camper fixed this way and it's still tight after 2 years.

What I've learned over the years is to use wood putty on the tooth picks. If you observe wood glue over a period of years, especially if it used externally, it will develop cracks. If you are going to keep your TT less than 5 years, ignore the above suggestion.

What Norty said. I have various sizes of dow rods which work well. I whittle them down if necessary. They are part of my RC aircraft building material but work great for this job.

This is what I do. It's a permanent fix.

Interesting, that's been my observation with wood putty!
