I have a 2018 Greyhawk and swapped out the slide thermostats for digital thermostats that is one of the best things that I have done to my motorhome.

Tad, it sounds like you are a newbie in the rving world. I'd suggest you get with another RVer and go over the electric/propane stuff.
An RV furnace needs 12 volts AND propane. Your plugged in 120 volts is reduced by your trailer to 12 volts for much of what is in the trailer.

Honeywell TH5110D1006 Honeywell Non-Programmable Thermostat, Up To 1 Heat/1 Cool.
I don't think it has a high/low fan speed, so a seperate switch for fan would be needed.
It got 'popular' last year.

Only way to insulate a RV better would be to make them with 3" walls. The only place where more insulation could naturally be applied would be the ceiling and floor, assuming the floor and roof weren't framed with tubular aluminum.
