Update: I had heard that when running the hot water heater after it has been off for some time can build extra pressure in the system which could cause a leak. So we turned on the water heater this morning and waited. Then the leak occurred. Strangely it was on the PEX cold water input. Drip drip drip. As soon as you turn on the tap the drip stopped. I had already tightened those lines by hand (pretty tight already) so I’m going to remove and add Teflon tape and re-connect. Hopefully that’s all it is. Still may swap out for a residential faucet anyway. Previous to this the sink was leaking because there was silicone caulking missing where it seals to the counter (which I fixed). Pretty bad when you spend $50k on a trailer and you get these sorts of issues.

Hope that is it, then; that would be great! Yeah, big $$ for these things and still have issues. Shouldn't have, but they do. Even rigs over a million, still have problems. Hope you can get back to enjoying soon!

Yes, RV water systems are closed meaning there's no place for the water to go as it expands due to heating. There may be a "cone" washer in the fitting, if so make sure it's in good shape and installed correctly. I've replaced a few cone washers in my unit already.
