Had the same problem with a new stove/oven my son bought for his trailer. Most often when the oven reached its set temp and the main burner shut off, the pilot light would go out. With no pilot light the main burner will not reignite to keep the oven at temp.
There is a thermocouple that the pilot flame hits that tells the control valve that the flame is lit. When you initially light the pilot the reason you have to hold the button in for a minute is to allow the thermocouple to heat up. Once up to temp, the pilot will stay on.
We tried replacing our thermocouple on the oft chance that it was flaky but that didn't help. The only other item in this equation was the control valve. Once that was replaced the problem never returned.
There isn't a whole lot of items controlling the oven - control valve, tube from valve to oven, thermocouple from valve to oven, pilot light, main burner.
Before throwing parts at the oven, make sure the pilot flame and main burner flames are clean looking. The main burner should be a blue flame mostly. There should be no sputtering in the flames would could indicate a propane problem. You can look at the stove burner flames also to verify that the burn cleanly.
