We've never stayed in a campsite that had full hook ups... is that bad?

I would say leave them closed and dump when necessary ... rinse the hose and put it up ... when you get ready to leave do a final dump ... close the grey valves and using a black tank rinse hose used only for that purpose not to be used for fresh water hookup flush the black tank with the gate valve open ... rinse the sewer hose and your done... I am going to buy a 10 ft hose just for rinsing mine when I have full hookup.

Much will depend on the size of holding tanks your rig has, how many people, how you live, cook and clean up. What is right for one may not be right for the next person. I can see no downside on either leaving your rig hooked up or hooking up only when dumping. There is no right or wrong answer.

Leave them closed. Dump black first, then gray to be sure solids are out of the hose. Mine comes with a flush fitting, so after draining both, I close both valves and fill the black tank thru the flush fitting, and dump it again. And using a clear hose fitting helps to know then it's running clear.
