Not sure about the dimmer, but if your not hooked up to power then I believe the inverter must be on in order to power the passenger pedestal.

Our 16 35s was the same. We had a custom mattress made for the bed that is shorter. The bunching didn't bother us we just wanted a more comfortable mattress.

Remove the cap, loosen the bolt and swivel the hanger forward. I did this and it fixed the problem on my 35s. Took about 2 minutes.
