Not that this helps with your diagnosis,

I never would have noticed this problem, all my RV Fridges have worked to good on propane (and use so little) that I never run them on the electric setting.

At the very least get a good Weight Distributing hitch and get some of that weight back to the steer axle and off of the drive axel. As it is your headlights must be pointing at the treetops.
