Short answer: You have to hold your device the other way.
Apple is particularly offensive about it. The image is stored exactly as the photosensitive element saw it. The orientation of the device at the time is also stored. Apple software reads the orientation data every time the image is displayed and 'corrects' the image at that time, every time.
Microsoft and Android (Linux) store the image right side up, so there is no correction during the display process.
