We will be making a long trip and staying in a hotel for one night. Will the refrigerator keep running overnight and keep everything cold/frozen? This will be the first time we will overnight with no shore power or generator.

Sorry... you're right. I didn't give enough info. We have a 2023 Seneca Prestige. I think there are two batteries, but when I look at the GoPower on the app, it only shows one battery charging.

If you have a fridge that runs on LP as well as either battery or AC then light the LP, make sure it's running and it will be cold as can be for weeks on one 20 lb. tank. If it is either a 120 volt AC or 12 volt DC then it is a matter of the capacity of the battery and how much draw the unit has.
If it is vital to keep the food cold, buy 5 lbs. of dry ice. Put half in fridge and rest in freezer or get multiple freezer packs and freeze them to keep it cold.

You should have 4 6 volt agm batteries. Not sure how they show on the app. If they are fully charged you should be fine running the fridge overnight. You should also have auto start on your geny which will kick in if the batteries get low. Either way you should be fine. Just make sure everything is "set" in the app.
