On the video he says that both the furnace and A/C will run if the fan is set to low or hi, not auto.

Can I assume that he means both of the fans will run, not that the A/C is actually cooling, while the furnace is heating?

I don't have the trailer here to play with.

Not really, low and high means the AC fan will run constantly at that speed. If you also turn on the heat which Is a separate function the heater fan will cycle on and off. Auto, low and high fan work with the AC and has nothing to do with the heat . It does sound confusing. But if you want you can run the air conditioning fan constantly and run the heater to distribute hot air throughout the trailer.

John, thanks for the excellent reference. It pretty much confirms what I found in the Dometic manual for the thermostat.
