There are several chains that specialize in fried chicken; no fuss and no lingering oily smells.

KFC is just one of them.

Sylvia's Fried Chicken - best flavor!!
1⁄2teaspoons salt
1 1⁄2teaspoons black pepper, divided
1⁄2teaspoon garlic powder
1⁄4teaspoon paprika
1⁄4cup vegetable oil (I prefer corn)
1 1⁄2-2cups flour
• In plastic bag, combine salt, 1 teaspoon of the black pepper, and the garlic powder.
• Sprinkle over the chicken and let stand at least 20 minutes (but overnight in the refrigerator is better).
• Place flour, the remaining 1/4 tsp. black pepper and paprika in a plastic bag.
• Add the seasoned chicken and shake until each piece is covered with flour.
• In a large skillet, heat oil over high heat, add chicken pieces and reduce heat to medium.
• Cook for 7 to 10 minutes or until chicken is nicely browned on the bottom.
• Turn and cook on the other side for another 7 to 10 minutes or until chicken is cooked through.
• Remove from skillet and drain on paper towels before serving.

Exactly the way my grandmother use to make fried chicken. The method of picking the chicken she would use was simple. When we went to gather eggs in the morning and she found one old hen that wasn't producing eggs, she tucked the hen under her left arm and declared, "you're lunch". 2 hours later the hen was plucked, cleaned, cut up and in the frying pan. No chicken I have ever eaten since tastes quite as good...certainly none fresher.

That sounds just like my grandmother, those sure was some good old days. My grandmother was wonderful.

I marinate in buttermilk with granulated garlic and paprika for 24hrs then toss in seasoned flour and fry in a DO. You can add as little or as much seasoning as you like to the flour. Also a little cornstarch will give you a more crispy coating. I usually go 4 flour to 1 cornstarch on the ratio.

Just here to say that this thread is making me hungry. My mom's fried chicken was the best too. I'd always grab for the fried backs- my favorite piece!

MY FAVORITE ANIMAL

Our teacher asked what my favorite animal was, and I said, "Fried chicken."

She said I wasn't funny, but she couldn't have been right, because everyone else laughed.

My parents told me to always tell the truth. I did. Fried chicken is my favorite animal.

I told my dad what happened, and he said my teacher was probably a member of PETA.

He said they love animals very much.

I do, too. Especially chicken, pork and beef. Anyway, my teacher sent me to the principal's office.

I told him what happened, and he laughed, too. Then he told me not to do it again.

The next day in class my teacher asked me what my favorite live animal was.

I told her it was chicken. She asked me why, so I told her it was because you could make them into fried chicken.

She sent me back to the principal's office. He laughed, and told me not to do it again.

I don't understand. My parents taught me to be honest, but my teacher doesn't like it when I am.

Today, my teacher asked me to tell her what famous person I admired most. I told her, "Colonel Sanders."

Guess where I am now?
