Road Trip along I 10 attractions

We are planning to travel with our little tin can on wheels from Maine to Death Valley in the spring late March to late April. We plan to follow something along I 20 to Dallas We do want to go to Waco and San Antonio so we will follow I-10 from there to Joshua Tree NP then work North to Death Valley and Las Vegas ( where we have friends). No intention of going to Los Angeles.

Are there any special places to camp or sights to see? We have a 195 RB so length has never been an issue. We don't prefer RV parks but tolerate when it makes sense nor do we require hookups.

The Caves of Sonora come to mind around the 100 mile mark west of San Antonio. it's a really great place to camp as well as great Cave.
Between Sierra Blanca and El Paso there is Cattlemans stake house and RV park, excellent stakes really pricey but so much worth it!
The book The Next Exit would be a good start.
I do have many more.
