We're also afraid of breaking something by exerting too much pressure on plastic parts. I should also mention we don't have a lot of strength in our hands to manhandle this. What would happen if we used a phillips screwdriver to remove the white plastic collar? (I don't know the name for it) Thanks for any advice you can give us. The unit is a 2017 Greyhawk 29ME.

do it one step at a time - and un-do it.
Remove the hose from the regulator first.
Use pliers - don't be afraid to mess up the hose - they're the cheapest.
then move the pliers up and remove the regulator from the Elbow.
then, as gently as possible... If you need channel locks, wrap a washcloth around the plastic knob before using the channel locks... hold the plastic collar and twist the elbow to loosen.
To loosen, I spin the Plastic Collar Clockwise.
So to loosen the elbow, you'd hold the plastic collar and twist the elbow Counter Clockwise.
