If this was a car I would suggest a leak of coolant that causes it to run until a low coolant safety switch turns it off the compressor. Once coolant settles the switch runs the compressor until the low coolant cuts it off again.
If this is the problem you will need an HVAC person to test and fix it. Although shaped differently it works much like a window AC. You may not need a RV repair person if you can find a company that will work on it.
Last thought, does your cold air blow directly on the thermostat??
