We got a 2017 in May to pull our new 26BH. I think what you might like the most about towing with your new truck is the 10 speed transmission...it rocks. I have the 3.55 axle, and at 62mph, I'm in 8th gear. Go up a good hill and it drops to 6th, up to 7th, and at the top, back to 8th. So, with my cruising speed of 62, it has 8 gears to choose from, and you'll find that it uses all of them very effectively.
I notice if I take it out of tow mode, at 62, it tends to go into 9th gear, which tells me a little about the choices tow mode is making.
Also, in tow mode, the transmission and it's brain do a great job of downshifting on downgrades for effective engine braking. I can see no reason to override it, as it does such a great job.
edit: I've also found that with so many gears to choose from, I tend to use the cruise control most of the time, and am impressed with how well it works. I'll occasionally override it, but it's nice not to have to very often.
Yeah, you're going to like it.
Now, I'd like to get a new Ford Fusion AWD with the 2.7 Eco Boost. But, that's probably not really gonna happen.
