Running fridge while closed
Getting set to go away for a few days, but expecting rain the day before we leave. Normally we would open the trailer before leaving to put everything in and then take it down and hit the road. Would like to do that a day early so it will be dry, but want to make sure it's okay to be running the fridge from the regular electrical hook up.

No problem, sometimes we load ours up two or three days before we go.

It's less work for the fridge to cool it down if its loaded with cold stuff already.
Say you got a 12cuft fridge and it takes say 4 hours to cool it down. If you load it with already cold stuff and say its loaded to half capacity, now it only has to cool 6cuft instead of 12 and the cold stuff that's in there is helping cool the inside down too.

We turn the fridge on 2 days before departure. Day before we load it up.
Just before we leave, my son goes in and flips the switch to propane and makes sure the propane light stays lit before locking up.

It sounds like you have a pop up? Either way, the fridge vents heat to the outside, so you'll be fine.

I've had to extend the 25' 30A umbilical cord, attach a 30A to 20A adapter and connect a 25' extension to reach the outlet inside the garage. For safety, make sure the electric on your HWT, A/C and any other high amperage devices are turned off.

On my 1007 the fridge had been wired into the electrical shutoff switch that turns off most power when the lid is closed, so it would not run on 12v or 120v with the lid closed, although it would run on propane. I do think this was a build error and may not be normal (although my dealership claimed it was designed that way). Just be sure that it is actually cooling on electrical with the lid down, otherwise you may be in for a nasty surprise!

Most (all?) popups have a cutoff switch so the ceiling lights won't catch the canvas or contents on fire and run down the battery. The fridge should not be on that circuit but should be on it's own circuit. This is to allow the tow vehicle to power the fridge during travel.
I preferred running with propane as my trailer battery was almost always dead as my car would not provide enough 12 volt even though it had a tow package alternator.
