I would be concerned about the extra weight of a full new layer of laminate over old. IMO I would remove the old. 2 boxes of laminate is probably 100 extra pounds of weight. Agree with PP that the new vinyl strip flooring is getting to look very good, is simple to install, and does not suffer the water issues of the laminates.
I would consider a TT to be a wet environment, and would recommend edge gluing if using a laminate not intended for wet. This seals the edges fairly well and prevents water swelling. Have done this in both kitchen and bath applications with good results after 10+ years. There are special glues available for this, but the bathroom install I did with a good quality waterproof glue (using really cheap WalMart laminate - DMIL couldn't afford anything more).
