It's prob doable. I do remodeling construction and have a property management company, so I have some skills. It's just my opinion, but you'd be chasing a $5 bill with a $20 bill by the time you were done. And if it wasn't 'factory' looking, you'll take a big hit when you go to sell. Like houses...bad remodeling stops sales in their tracks. Good remodeling only makes things sell faster, not for more.
I have a 30rds which has a larger banquette and I, personally wouldn't attempt what you want to do. The wife and I spend most of our 'inside' time at that doing our whatevers, not just eating and I'm fairly certain I'd get divorce papers for even thinking of changing it.
