All Seals/Seams
I am wanting to re-caulk all my seams, etc. Does anyone have any suggestions as to the best product to use. I am going to need some white and some clear caulking.
Also, recommendations for the rubber seals around the slides.

For the rubber, I use 303 Aerospace. Dicor or ProFlex RV for the caulking. Both available on Amazon.

Please post your make, model and year of your RV and what areas you are talking about.
For my roof I applied Etearnabond around all the vents, antennas, pipes, etc. after removing some or all the factory Dicor that was starting to crack, peal, come up or just wasn't installed properly. Also did the front and rear edges.
Around windows and doors ( I had a really big factory poor installation leak on the front window) I used clear OSI quad seal. Never use silicone products!

I've been using OSI quad seal grey on ours, but it seems to remain sticky and attracts dirt, so I'm on the lookout for something else.

I generally stick with dicor self level for the roof. Most likely its what was used originally.
Sides depends on what needs to be sealed. Dicor non-self leveling ok, again; what was probably originally used.
For clear application- proflex. You may want to try out proflex on a test area first to get to know it; it can be "fun" to tool. Its consistency is thicker than silicone that you may be used to.

Personally I would not do 100%. My rig is 10 years old. This year I did the most I have ever done in a single year.
5 years ago I did all of the roof with Eternabond. When I saw my first caulking blister. Hardest part was around the sewer roof vents.
If you caulk everything, that does not eliminate the need to inspect and touch up every year.
I started caulking about 5 years ago. Most years I find a joint or something small that should be touched up. One spot I have touched up now three times. This year I did the most I have ever done. And it was probably 15 feet in total. Most of that, did not need it, I just did it, for cosmetic reasons.
I like OSI Quad, easy to get at any DIY hardware store. Comes in 100+ colors.

I use Eternabond sealant caulk and tape for all things roof related.
I use clear Geocel for windows, doors, external walls, lights, and hatches.
I use Ultra Black RTV on screws, except for the screws around the roof perimeter that receive Eternabond caulk.
I use black and white Quad wherever Jayco used them.

Eternbond and Dicor on the roof
OSI Quad on vertical surfaces.
The roof gets lot of attention and extra sealing.
The sides, front, back, undercarriage gets inspected a couple times a year and re-caulked prn. Generally there has been very little need to re-caulk seams.

Jayco recommends Geocel. I have used the clear and the black for exterior window seams etc. For the roof seams nothing beats Eternabond.

Which ones? They have a large amount to choose from but none are recommended for RV’s.

If your question is which caulk, the only one available in my experience from a home store is OSI Quad. It comes in many colors. The others are not stocked in hardware stores but rather camping parts dealers or online.

Dicor self leveling on the roof and OSI quad on the sides. OSI is tackfree in about 10 hours, but does take 1 or 2 weeks for a full cure. I did mine 3 years ago with OSI and have never had any problems with it. I check the roof a couple of times a year and touch up where necessary.
