Pretty sure this is it.....

its the fridge thats draining my batteries! Had this issue on a previous trailer and was able to just pull a fuse. This one is a little different....

You can see towards left of picture, picture is sideways, Lamp/Heater.
What I need to know is, is that a blade connector that I can just pop off? I grabbed it and gave a little pull, but don't want to break it.

Yes sir, those are indeed blade connections, and I'm sure they've never been removed since new, and has a good grip on the spade. I would carefully wiggle it up and down a little to get it moving, and it should come off eventually.

Years ago there was a switch for this, then they removed it. Who's brilliant idea was that? My other trailer was a 2016 with this issue and people that helped me had the issue from 5 or 6 yrs before me
Why wouldn't they put the switch back in?

So, then is the issue that this controls the defrost cycle? So if you disco that spade connector you'll lose the light and it won't go into defrost?

No for condensation if you are in humid areas. Yes you lose the light in fridge, but I use a Walmart battery operated motion light. It turns on when you open the door.
At some point I will put in a switch so I get my light back.

And the issue is it runs all the time pulling 3 amps! So if you are boondocking it runs down the batteries.

Why does it run all the time? That seems strange and unnecessary? Seems like it would only pull when it needs to, like for a defrost cycle? I mean, isn't that how it mitigates condensation? By warming up the fins once a day for a defrost?

Another mystery for me to learn about... But I'd unplug the darn thing too!

Unplug light

I unplugged the light inside the fridge (connector on back of led light array)
Our 8cuft fridge consumes 0.95 amps of battery while on propane.
I searched everywhere but couldn’t find out the current draw of the led light.

Is 0.95 after you unplugged the light?

Look at your fridge schematics, the fridge light and heater are on the same connector (look at my picture above). My lamp/heater connector is powered by a 3 amp fuse. The heater runs constantly, the light turns on when it senses motion, door opening.
