183 RB Slide Mods?

We purchased a 2021 183RB about a month ago. We’ve camped several times in order to get a feel for what we would like to modify and our only real area of focus is the slide/dinette. First, the table top is about 3” too high. I feel like I’m eating at the kid’s table. There isn’t a support strip in the wall to anchor it lower. However, after spending more time, so I think we’d like to take out the dinette and put in some sort of seating. Has anyone done this and can give me some ideas?
