I think that it is a distinct possibility as I have encountered that as well and didn't have problems with all of the vents open.
Another possibility is that many (maybe most) RV A/C's have a freeze sensor on the coils that is supposed to turn off the compressor when freezing is detected. There have been reports in the past where the sensor failed or fell off. It is located on the cold coils (evaporator), but you may want to verify the exact unit you have and see if you can find specific details into if you have one and if so where it is.
One other thought to share, you can clear the frozen coils faster if you leave the fan "on" and the a/c off (or at a higher setpoint temperature) which will thaw out the A/C much more quickly. ~CA
