In theory, you should be fine. The pex tubing should be fine with a little water left in it. Being you do not know where any remaining water has accumulated, I get concerned will a fitting or valve break, due to water accumulation.
There is a lot of thermal mass in the 5ver. If your day time highs are going to be well above freezing, and it will dip down to the mid 20's for a few hours, you should be fine.
I can tell you from experience there are dips in the piping and there will be water left in places. When I blow my lines out, I get a couple extra cups of water out of my kitchen faucet. I certainly feel more comfortable spending the extra couple minutes blowing out my lines.
